Where dose the name come from?

Hey Guys! Happy Monday!! ?? we thought we would put a cute lil pic of ourselves up, just because we like to say hi occasionally.

If you haven’t met us yet, we are Ox and Rabbit. Taken from our birth years in the Luna calendar. You may ask why the name? What does it have to do with brownies and decadent cakes?! Well… Not a lot to be honest. But when you have a little small business like we do, you have to put a lot in, and a lot of your energy and personality.Lots of sleepless nights, early mornings and never enough coffee!! But we love it, we love to put a little bit our personality into our products and anytime we have the pleasure of catching up with clients. So that’s what’s with the name. ❤️❤️

Baked Blueberry Cheesecake

By Robert Campbell – Master Baker OX RABBIT



  • 200 g Plain biscuit
  • 120 g  salted butter , melted


  • 500g cream cheese , softened 
  • 2 tbsp plain flour (all purpose flour)
  • 1 tsp  Madagascan Vanilla Bean
  • 125g sour cream (full fat)
  • 330g  Caster Sugar
  • Freshly grated lemon rind
  • 3 eggs , at room temperature
  • 1 punnet Blueberries
Think Bass, Light Filling

Prep Time: 30 minutes Cook Time:55 minutes Servings: 12

Baking Pan Size 23cm x 17 cm 


  • Preheat oven to 160C/320F (standard) or 140C/295F (fan/convection).
  • Get a 23cm x 17cm baking dish, butter lightly and line with baking paper on the base.


  • Break up biscuits roughly by hand and place in a food processor.
  • Blitz until fine crumbs.
  • Add butter, briefly blitz until dispersed and it resembles wet sand.
  • Pour into the prepared dish, spread it out over the base, Use something with a flat base, to flatten the base.


  • Use a mixer or beater to beat the cream cheese until smooth – about 30 seconds on medium high,.
  • Add flour, beat until just combined (10 sec).
  • Add vanilla, sour cream, sugar and lemon zest. Beat until just combined (10 – 15 sec).
  • Add eggs one at a time, beat in between until just combined (10 sec each). Don’t over beat, do not want to aerate the batter.
  • Pour into prepared crust.
  • Bake for 55 minutes. The top should be a very light golden brown, not cracked, It should jiggle slightly when you gently shake the pan.
  • Cool the cake in the oven with the door open, then refrigerate for 4 hours+ in the pan.
  • Top with berries and dust with icing sugar, If you wish.

  1. Cool in oven: This helps stop the surface from cracking.
  2. Place Baking :Paper over the top while baking,

Coconut Dark Chocolate Mud

Coconut Mud Cake

This is has got to be one of my top flavour combinations, Dark Chocolate & Coconut.  I first came across it in a mud cake, back in 2013 when we were in LondonIain almost died when he saw this cake, but unfortunately, it wasn’t Gluten Free. So for his 30th Birthday I set about creating my own version of Coconut Mud Cake.

  • 325gm Butter
  • 325gm Dark Chocolate (Min 70%)
  • 5 Eggs (Free Range 55gms)
  • 250gm Sour Cream 
  • 100ml Coconut Oil
  • 150gm Brown Sugar  
  • 150gm Coconut Sugar
  • 300gm Plain Flour (Can use Gluten Free Plain Flour)
  • 5gm Bi-carb
  • 5gm Baking Powder
  • 50gm Moist Coconut Flakes

Cake Tin Needed 24cm Springform

Prep time 15min

Baking Time 45-55min

Preheat oven to 165o 


  • In mixing bowl combine Brown Sugar, Coconut Sugar, Flour, Bicarb and Baking Powder.  Using a whisk to combine. 
  • In a microwave safe bowl melt butter and chocolate together.
  • Whisk eggs, sour cream and coconut oil until combined. 
  • Add all WET ingredients with DRY ingredients until combined. 
  • Mix in the moist coconut flakes.
  • Pour in to the cake pan, place in Oven.

OX`s Tips:

Line the sides of the cake pan to stop the sides from burning,

Place a sheet of baking paper of the top of the cake to stop the cake getting to hard and burnt on top.

We at OX RABBIT work so long and hard these days that the only thing fuelling our bodies is an on the go, constant supply of coffee and café treats. At this point we have such a huge list of Perth go-to spots that we figure it would be selfish not to share it.

The Wolf Espresso

The Wolf Espresso is situated in the heart of Perth’s iconic Wolf Lane. It’s a great chilled out spot to meet friends or colleagues for some coffee and a healthy, on the go lunch. The Wolf Espresso has a really friendly bunch of staff that provide great service and good vibes every day. We love their focus on catering for balanced, healthy lifestyles and nothing says “balance” more than following a healthy Mango & Coconut Chai Pot with a chocolatey sweet treat. The Wolf Espresso offer a number of delicious cakes and muffins, including the famous OX RABBIT brownies!

After months of construction, the new and improved Raine Square, located in the heart of Perth City’s shopping district, has opened. Amongst the exciting retail, dining and entertainment options, Voodoo Coffee stands out. COFFEE COFFEE COFFEE! Owner of Telegram Coffee, Luke Arnold has spent over 20 years perfecting the ‘coffee craft’ and it isn’t hard to see his dedication and passion reflected in the Cathedral Square café. It sits nestled in amongst the restored State Buildings (also known as the Old Treasury Buildings); creating an atmosphere that feels more peaceful than the bustling city surrounding it. Telegram Coffee is a unique spot to escape the world around you and get lost in an expertly made coffee.

QT Cafe

QT Café is a relatively new joint opened in conjunction with the luxe QT Perth hotel, and we are pretty proud of ourselves for coming across this hidden little gem. They offer up pours of premium seasonal beans to unique crowds of coffee connoisseurs. Centrally located, and with a great range of food and drinks, you never know who you may run into at QT café. We couldn’t talk about QT Café without also mentioning their delectable range of OX RABBIT brownies and other sweet treats. This spot is an amazing new addition to Perth city’s robust caffeine scene.
